SUBSTANCE: invention relates to the food concentrate industry, and can be used for the preparation of oatmeal jelly concentrate. The following is proposed: a method of the production of oatmeal jelly concentrate, which involves the use of oat powder obtained from hydrothermally treated oat grains, which is poured with distilled water, preheated to a temperature of 35–42°C, with a hydromodule of 1:6, with stirring, the resulting mixture of water and oat powder is heated to 75–80°C, stand for 8–12 minutes and is cooled to a temperature of 22–27°C to obtain a gelatinized mass, to which a blend prepared from a diluted extract distilled with water is added, the said blend is aqueous-glycerin extracts from blueberries and reindeer antlers powder, with a hydromodulus of 1:4–1:5, with the addition of granulated sugar in the amount from 2.5 to 3.2% to the gelatinized mass and guar or xanthan gum in an amount from 0.20 to 0.25% to the gelatinized mass, then everything is mixed in a mixer, heated to a temperature of 85–90°C and dried in a spray dryer.

EFFECT: invention makes it possible to obtain a high-quality finished product through the use of raw materials with high nutritional and biological value, short heat treatment at the gelatinization stage, improvement of organoleptic characteristics — taste, aroma, consistency uniformity, short technological process, increase preventive focus through the use of local raw materials rich in biologically active substances.
