SUBSTANCE: invention relates to the confectionery industry, and can be used in the production of cupcakes with camelina cake, which has functional and high consumer properties. The method of preparing a cake with the addition of camelina cake is characterized by the following: it involves preliminary grinding of the camelina cake, sifting it and mixing it with premium wheat flour and potato starch. Next, the butter is beaten for 7–10 minutes, followed by adding granulated sugar and whipping for 5–7 minutes, to which the melange is gradually added with continuous stirring and the essence is added, mixed until smooth. The dough is kneaded with a moisture content of 25% using a mixture of bulk ingredients — premium wheat flour, camelina cake and potato starch. The finished dough is laid out in molds, the surface of the dough is leveled, the molds with the dough are placed on sheets and baked, the baking duration is 25–30 minutes at a temperature of 205–215°C. Next, sampling from the molds and surface finishing are carried out, packaging and labeling are carried out.

EFFECT: invention makes it possible to obtain a cake with increased nutritional value and a balanced composition, reduced energy value to expand the range of flour confectionery products.
