FIELD: food industry.
SUBSTANCE: invention related to waste-free processing of muscle meat and meat and bone secondary raw materials. The line for production of packaged drinking broth, meat and bone paste and cooked meat consists of a raw meat grinder 1, a shredder for grinding bone raw materials 2, replaceable perforated containers 3 and 4 installed in a modernized steamer 5 for separate cooking of meat and bones, a boiler 6 for preparation hot water for feeding the steamer and desorption cleaning of the equipment of the flow-technological line, adsorption filtration unit 7, homogenizer 8 and ultrasonic flow-type unit 9, broth sterilizer 10, packaging machine that fills and seals the broth into cups, grinder-paste maker 12, mixer for final products 13 and roller sealer 14 for bags with meat and bone paste.
EFFECT: invention makes it possible to simultaneously produce on one production line from meat and bone raw materials three products that have high nutritional properties that replenish the deficiency of animal protein, vitamins and microelements.
