FIELD: food industry.

SUBSTANCE: invention relates to non-waste technology for processing food secondary resources from poultry and farm animals. Method for production of meat and bone paste from food secondary products of processing of poultry and farm animals involves preliminary grinding of raw material with addition of water, hydrothermal treatment and homogenisation. Raw material is ground to size 1-30 mm with addition of water in ratio 1:0.2-4.0, and hydrothermal treatment is carried out in a continuous flow under steam pressure of 0.2-1.0 MPa for 0.3-10 minutes with subsequent homogenisation. Meat and bone paste is a homogeneous mass, its digestibility at said processing conditions reaches 90 %.

EFFECT: meat and bone paste is used in food industry as a food additive in production of mince and sausage products in place of 10-15 % of meat raw material unconventional, as well as for enrichment of products natural assimilable calcium.
