SUBSTANCE: invention relates to fat-and-oil industry. Fat composition containing at least 50 wt.% saturated (Sat) fatty acids, in which: a) from 1.0 to 25 wt.% are C4-C14 fatty acids, b) from 0 to 5 wt.% are trans-unsaturated fatty acids, c) from 0 to 20 wt.% are tri-saturated triglycerides (SatSatSat), d) from 1 to 20 wt.% make symmetrical OStO triglycerides, e) from 45 to 99 wt.% are triglycerides Sat2O, selected from StStO, StOSt, POP, PPO, POSt, StPO and/or PStO, and f) ratio (StStO+PPO+StPO+PStO)/(StOSt+POP+POSt) is at least 0.7. Compound product containing a fat mixture containing cocoa butter and said fat composition. Compound product contains from 20 to 50 wt.% fat mixture, and where the fat mixture contains from 1 to 20% of cocoa butter and from 80 to 99% of a fat composition.

EFFECT: fat composition is used for production of technologically processed food product for human consumption, or as an ingredient of confectionary product, or as an ingredient of compound products for coating a confectionary product, or as an ingredient of a chocolate-like product.
