FIELD: food industry.
SUBSTANCE: present invention relates to food industry, in particular, to a structured food product with an uninterrupted fat phase where the food product contains, in relation to total weight of the product: a) less than 30 wt % of saturated fat acids, b) 20-100 wt % of a triglyceride composition, c) 0-80 wt % of a filler; d) less than 15 wt % of water wherein the triglyceride composition contains, in relation to total weight of the triglyceride composition: e) less than 45 wt % of saturated fat acids, f) less than 10 wt % of trans-isomeric unsaturated fat acids, g) at least 8 wt % of triglycerides SUS, where S is saturated fat acid C16-18, U is unsaturated fat acid having at least 18 C atoms, h) less than 15 wt % of S3, i) at least 90 wt % of fat acids C8-18, j) at least 75 wt % of fat acids C18 including saturated and unsaturated fat acids, k) SFC = 5-50% at 20°C.
EFFECT: invention allows to produce a structured food product with an uninterrupted fat phase; the product has an acceptable texture, a good nutritious profile, a more solid structure than one could expect judging by the triglyceride composition.
