FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to production of frozen desserts based on vegetal raw materials. Method for production of frozen dessert involves preparation of raw materials, preparation of the mixture according to the recipe, dosing, mixing, heat treatment of the mixture, cooling, maturation, freezing, packing and hardening. Pumpkin puree, sea-buckthorn juice, topinambur syrup, coconut milk and pectin are mixed at the following ratio of components, wt.%: coconut milk – 50.0, pumpkin puree – 20.0, topinambur syrup – 15.0, sea-buckthorn juice – 14.0, pectin – 1.0.
EFFECT: invention enables to obtain a sugar-free frozen dessert based on vegetal raw materials, which can be used as a source of food fibres.
