FIELD: food industry.
SUBSTANCE: invention relates to the food industry. A method for the production of quick-frozen fruit and berry desserts is proposed, which involves mixing the fruit and berry component with a cooled sugar-pectin solution, homogenization of the resulting mixture, freezing, batch packaging and rapid freezing. As a fruit and berry component, a pre-prepared three-component pureed mixture of “apricot-persimmon-sea buckthorn”, or “apricot-feijoa-blackthorn”, or “apricot-persimmon-dogwood”, or “apricot-feijoa-currant” is used.
EFFECT: method contributes to the maximum preservation of the nutrient composition of the fruit and berry raw materials used, which ensures the production of desserts with high nutritional value and dietary properties.
