FIELD: food industry.
SUBSTANCE: proposed seasoning includes seasoning base, thickener and stabilizer and is made in the form of portions ready for consumption—slices. Slices are surrounded by vegetable oil. Moisture content of the slices is equal to 30–55%. Also disclosed is a method for preparation of seasonings. Method involves mixing a seasoning base with a thickener and a stabilizer, heating the mixture and drying. Mixing base with stabilizer is carried out at room temperature, then the mixture is heated to temperature of 90–93 °C, boiled with continuous stirring for 5–7 minutes, obtaining a plastic mass. By extrusion from the mass, bundles with thickness of 1 to 10 mm are formed, cut and dried for 1–6 hours at temperature of 45–60 °C. Formed slices are placed in a container which is filled with vegetable oil and sealed. Duration and temperature of drying are determined based on the condition that weight fraction of moisture of the slices in the finished product is 30–55%.
EFFECT: invention ensures expansion of the range and improvement of organoleptic properties of the seasoning, increase of consistency stability and organoleptic properties as well as increase of nutritive value.
