SUBSTANCE: flavouring vegetable seasonings, such as sauces, ketchups, in the form of portioned dense flat slices for use as an independent product or for preparing layered dishes such as sandwiches, toasties, bruschettas. Portion flavouring vegetable seasoning includes a base for seasoning, a thickener, and contains a stabilizer, and the seasoning is divided into portioned flat slices, and constant preservation of a dense consistency is achieved due to the fact that the mass fraction of the thickener in the total mass of the product is 0.5-2.5%, the mass fraction of the stabilizer in the total mass of the product is 0.4-2%. The method for preparation and portioning of the seasoning is characterized by the fact that the base of the seasoning is mixed, heated to a temperature of 50-90°C, then thickener, stabilizer are added and the resulting mass is stirred, brought to a boil and cooled or boiled for 1-5 minutes, then cooled and spread on the surface for drying with a layer of no more than 15 mm, after obtaining a dense layer, it is divided into portioned slices, and the slices are packed in individual packaging, and the mass fraction of the thickener in the total mass of the product is 0.5-2.5%, the mass fraction of the stabilizer in the total mass of the product is from 0.4 to 2%.

EFFECT: increasing the convenience of using the seasoning for preparing dishes such as sandwiches, toasties without leakage and the risk of getting dirty, as well as to prevent the seasoning from spreading, to give it a consistency different from the traditional one in the form of a dense layer.
