FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to production of flour confectionary products. Butter cookie is characterized by the fact that it includes emmer whole grain flour, butter – traditional sweet and unsalted butter with fat weight fraction of 82.5%, sugar powder, melange, lemon peel and milled fenugreek seeds at the following ratio of initial components, wt.%: whole grain emmer flour 43.25–45.0, butter – traditional sweet and unsalted butter with fat weight fraction of 82.5% 38.7–38.9, sugar powder 6.0–6.65, melange 2.95–3.05, lemon peel 5.0–6.0, milled fenugreek seeds 1.5–2.5.
EFFECT: invention allows to obtain a ready product with high organoleptic indices and to expand the range of flour confectionary products.
