SUBSTANCE: invention can be used for the production of enriched bakery products. Bread enriched with vegetable protein includes wheat flour of the highest grade, lupine flour, pressed baker's yeast, table salt, granulated sugar, 1% ascorbic acid solution and water. At the same time, the ratio of the initial components per 100 kg of baking flour is, kg: wheat flour of the highest grade - 100, lupine flour - 5-10, baker's yeast pressed - 2.9-3.1, food table salt - 1.2-1,4, granulated sugar - 2.4-2.6, ascorbic acid solution 1% - 1.4-1.6, water - by calculation.
EFFECT: invention makes it possible to obtain enriched products with improved physical, chemical and organoleptic quality indicators.
