FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular to a method of producing an extract for preparing functional beverages and can be used in production of food products based on rational use of resources, with functional properties. Disclosed is a method of producing an extract for preparing functional beverages, involving taking whole food blood obtained during slaughtering cattle, stabilizing it with solution of 4% sodium citrate at ratio of 1:10, then the obtained mixture is separated on a “СК-1” separator for separating blood plasma, wherein the obtained blood plasma is treated with a collagenase enzyme to an enzyme preparation concentration of 0.35% at temperature of 35–40 °C and pH 6.8–7.2 for 2.4–2.6 hours, which leads to preservation of a number of indispensable amino acids, the obtained hydrolysate is then mixed with dried lemon balm ground to 1-3 mm at ratio of 12:1 and heated to 60–70 °C with subsequent holding for 120 minutes in a water bath, then the obtained extract is filtered through lavsan sock filters.
EFFECT: invention enables to obtain an extract enriched with biologically active components of vegetal origin, having high nutritive and biological value and organoleptic characteristics.
