FIELD: food industry.

SUBSTANCE: invention relates to the food industry, in particular to a method for producing a base for production of a soft drink, and can be used in production of food products. Method consists in the fact that pre-collection of blood of slaughter farm animals is carried out and it is stabilized according to the requirements for blood and products of its processing according to GOST 33674-2015, which is a natural raw material. Then the blood is separated into fractions with the obtaining of blood plasma and subjected to pretreatment, which is carried out by enzymatic hydrolysis of proteins, at the same time, blood plasma is diluted with drinking water to achieve a protein concentration in the solution of 4.0–4.5 %, and enzymatic hydrolysis is carried out with the enzyme preparation of collagenase to a concentration of the enzyme preparation of 0.35 % at temperature of 35–40 °C and pH 6.8–7.2 within 2.4–2.6 h, and for the inactivation of pasteurization enzymes, blood plasma is mixed with pre-prepared food additives in accordance with the selected formulation, the resulting mixture is additionally heated to a temperature of 65–70 °C and incubated within 20–30 minutes, while using sugar syrup. Then the drink is cooled and sent for bottling.

EFFECT: invention allows to simplify technological process and reduce the time of hydrolysis, and also provides the degree of hydrolysis of plasma proteins to 82 %, due to which the drink contains a greater amount of well-digestible free amino acids approximately 1,7–1,9 times.
