FIELD: food industry.
SUBSTANCE: disclosed is a method for production of apple jam, according to which prepared apples are cut into segments and covered with sugar, taken at rate of 20 kg of sugar per 100 kg of apples, left for 8–12 hours until the apples are juiced. Then apples are mixed and cooked with juice during 5–8 minutes, then brought to the boil. Cooking process is carried out 2–3 times in 8–12 hours. Ready jam is poured into a container and cooled.
EFFECT: invention is aimed at enhancement of nutritive and physiological value of the product.
