FIELD: food industry.

SUBSTANCE: proposed a method for producing fruit-and-vegetable sauce including mixing apple and pumpkin puree with a sweetener, adding garlic and spices and boiling the produced mixture. Apple and pumpkin purees are obtained by blanching apple and pumpkin slices with hot steam and milling to a puree state, into which erythritol is added as a sweetener, and boiled for 8–10 minutes, then cooled to temperature of 35–40°C and nut-spicy composition is introduced, which consists of cedar nuts, preliminarily dried and milled to a paste-like consistency, followed by mixing with a mixture of spices in the form of milled garlic, cinnamon and cloves.

EFFECT: invention ensures production of a sauce with preservation of the greater part of useful substances, as well as expansion of the range of products for people suffering from diabetes mellitus.
