FIELD: food industry.
SUBSTANCE: invention relates to technology for production of dough stuffed with fish mince in the form of dumplings. Disclosed is a method for the preparation of fresh-frozen pike dumplings, which involves kneading dough from wheat flour, preparing the filling, rolling the dough in a layer, laying out the filling formed in the form of balls on the middle of the layer, covering the mince with the edges of the dough layer, cutting the dumplings with the help of the mold, wherein the edges of the dough layer are smeared with an egg, and the filling is prepared from freshly frozen pike by thorough mixing of pure fish fillet without skin and bones, milled bulb onions, culinary food salt, sugar sand, ground black pepper and cold melt water, at the following ratio of initial filling components, %: fish fillet 75; bulb onions 8; culinary food salt, sugar sand, ground black pepper 2; cold melt water 15.
EFFECT: invention ensures expansion of the range of semi-finished products with simultaneous increase of their gastronomic value.
