SUBSTANCE: invention relates to the food industry, in particular to the production of chopped semi-finished products, and is intended for use in meat processing plants. Chopped semi-finished meat product with filling is proposed, which is made from minced meat, consisting of 1st grade trimmed beef, egg melange, flour, table salt, ground black pepper and stuffing with vegetable components, while wheat flour and chickpea flour are used as flour for minced meat. obtained from chickpea grain treated with microwave radiation for 5 minutes at a radiation power of 200 W or 3 minutes at a radiation power of 400 W, followed by grinding to a particle size of 50-100 microns, and sautéed eggplants, parsley are used as a filling with vegetable components , garlic, with the addition of table salt and ground black pepper, in the following ratio of initial components, % by weight: trimmed beef 1st grade 48.0; melange egg 8.0; wheat flour 4.0; chickpea flour 3.5; edible salt 1.5; ground black pepper 0.5; eggplant 30.0; parsley 1.5; garlic 3.0.
EFFECT: increasing nutritional and biological values, as well as an expanding the range of chopped semi-finished products.
