FIELD: food industry.
SUBSTANCE: described is a method of producing pea isolate, characterized by the fact that pea flour is pre-washed in an acidic medium at hydromodule HM=1:5, pH=4.5, T=50 °C for 30 minutes, then alkaline extraction of washed pea flour is carried out at HM=1:5, pH=9.0, T=40 °C for 60 minutes, acid precipitation of the extract at the isoelectric point at T=(20–25) °C, pH=4.5 for 30 minutes, after which protein paste is neutralized and dried in spray drying to obtain pea isolate.
EFFECT: invention provides a light colour in the pea protein isolate with a weight fraction of protein of more than 85% on an absolutely dry substance, a neutral taste and odour both in dry form and in form of 5% solution in drinking water, as well as possession of high functional and technological properties, in particular high solubility.
