FIELD: food industry.
SUBSTANCE: disclosed is a method of producing protein isolate from defatted pea meal, characterized by that defatted pea meal is extracted with acetone in three steps, each of which is carried out for one hour at temperature of 20-25 °C and constant stirring, wherein the ratio of meal to acetone at the first stage is 1:5, at the other two is 1:3, at the end of each stage the vegetable oil miscella is separated, alkaline extraction is carried out at pH 9.6 and hydromodule 1:18 for one hour at temperature of 20-25 °C, then the protein extract is separated and cleaned from the solid residue and insoluble components, the protein is precipitated with 25% citric acid at pH 4.5, the protein mass is separated from the liquid part and the obtained protein mass is neutralized with an alkali, then protein mass is frozen to -20 °C and freeze-dried, milled and packed.
EFFECT: invention enables to obtain an isolate with high protein content, improved functional-technological and taste properties.
