FIELD: dairy industry.

SUBSTANCE: described is a method for production of a kumis product from cow milk, which involves adding to cow milk of kumis starter, sugar, ripening of milk at temperature of 28 °C to acidity of 100 °Th, wherein a decoction of empty puparia or dead black soldier flies is added to the kumis product, the broth is prepared by milling empty puparia or dead black soldier flies to size of 0.2–2.5 mm, placing them in water at ratio of 0.1:0.5 g per 100 ml of water, bringing to a boil, boiling for 5 minutes and reducing the temperature of decoction to 50 °C, the obtained decoction is filtered and 4.38 g of sugar and 62.5 ml of the decoction are added to 0.5 l of cow milk.

EFFECT: invention widens the range of fermented milk products.
