FIELD: milk industry and biotechnology, in particular, preparing of heterofermentative fermentation products such as kumis.
SUBSTANCE: method involves preparing nutrient medium based on milk whey and potato decoction; introducing symbiotic starter produced by cultivation of kefir fungous starter and thermophilic lactic acid bacteria (Massol's bacillus and lactobacillus acidophilus) at temperature of 30±2 C during 2-3 days; providing cultivation and deoxidation of nutrient medium; separating resultant biomass and mixing with protective medium; bottling and freezing.
EFFECT: increased acid forming and alcohol forming capacity of symbiotic concentrate and increased quantity of yeast.
