FIELD: chemistry.

SUBSTANCE: group of inventions relates to a method of producing coloured hydrogel-based materials, a coloured material and a food product containing the material. Method involves applying an aqueous dye composition containing water and a dye material containing a thermally unstable dye on the outer surface of a plurality of hydrogel-based materials. Materials contain a hydrogel matrix based on a gelling agent selected from the group consisting of gelatine, pectin, alginate, casein, gellan gum, carrageenan, agar, pullulan gum, or a combination thereof, and an excipient, and one or more active ingredients, including flavouring and/or aromatic ingredients. Aqueous dye composition and a plurality of hydrogel-based materials are mixed, wherein substantially the entire aqueous dye composition is adsorbed in the hydrogel matrix. Coloured materials based on the hydrogel are dried at a temperature sufficient to remove at least part of the water adsorbed in the hydrogel matrix, thereby leaving the colouring material therein. Introductory dye composition is substantially free of any water-miscible cosolvent, and the thermally unstable dye is configured to change the colour appearance parameter when exposed to a temperature higher than the thermal decomposition temperature of the colouring material, wherein temperature of thermal decomposition of colouring material is 80 °C or less.
