FIELD: confectionery industry.
SUBSTANCE: soluble chewing confectionery product based on sugar or free of sugar contains 0.5-20 wt% of oxidized starch and up to 10 wt% of Arabic gums. Chewing product is neither chewing toffee nor chewing rubber or jelly. Chewing confectionery product may be made in the form of chewing candy, which may be made with core filled with liquid, syrup filler or powder. Method involves heating oxidized starch; mixing it with other components of end product; cooking resultant mixture and forming cooked mass.
EFFECT: provision for obtaining of confectionery product retaining consistency and properties characteristic of gelatin and preferable for consumer.
