Method of increasing content of sugars and accelerating the beginning of ripening of grapes includes single spraying of bushes of seed varieties of various origin at the stages of embryogenesis or embryogenesis with an aqueous solution of physiologically active compounds with a flow rate of working fluid of 0.5 l/bush, at that, foliage treatment of grape inflorescences for varieties Vitis vinifera L. is carried out with predominant growth of ovary walls on 10–20th day after flowering with an aqueous solution containing: gibberellin A3—10–25 mg/l, cytokinins—2–40 mg/l, auxins—2–10 mg/l, streptomycin—200–400 mg/l, for varieties with predominant ovule growth on 20–35th day after termination of flowering with an aqueous solution containing: gibberellin A3—15–50 mg/l, cytokinins—2–40 mg/l, auxins—2.5–25 mg/l, streptomycin—200–600 mg/l, and for varieties of interspecific origin and complex hybridization by 15–35 day after flowering with an aqueous solution containing: gibberellin A3—25–50 mg/l, cytokinins—2–40 mg/l, auxins—2.5–25 mg/l, crezacin—50–100 mg/l, streptomycin—200–600 mg/l.

EFFECT: proposed method of increasing the content of sugars and accelerating the beginning of ripening of grapes provides optimization of the organization of harvesting grapes, improves quality of raw materials in production of liqueur wines and dried products.
