FIELD: biotechnology.
SUBSTANCE: invention relates to biotechnology, namely to a method of producing a protein-phosphate complex – inhibitors α-amylase from leguminous crops. Method of producing protein-phosphate complex of beans, having inhibitory activity on α-amylase, including milling beans in a mill to flour state, sieving through a sieve with a hole diameter of 1 mm, extraction of protein substances in an ultrasonic bath with parameters of 95 V, 50/60 Hz using a phosphate buffer solution with pH 8 for 15 minutes at a ratio of bean flour : buffer solution of 1:15, centrifugation at 4,000 rpm at temperature of 5 °C for 5 minutes, vacuum filtration, precipitation of protein-phosphate complex with cooled acetone in ratio 1:2, secondary vacuum filtration, washing with cooled diethyl ether in amount of 7.5 ml per 1 g of raw material, drying of protein-phosphate complex.
EFFECT: method described above maximizes output of the end product – protein-phosphate complex and preservation of its biological activity.
