FIELD: raw plant material reprocessing industry. SUBSTANCE: method involves grinding raw plant material; mixing with water; acidifying medium to pH value of 4.5-4.6; extracting ballast substances; separating liquid and solid phases by centrifuging; washing solid protein sediment and dehydrating by drying process; mixing raw material which ground to particle size of 100 microns and separated from enclosures with water in the ratio of 0.9-11 : 3.9-4.1; during extraction of ballast substances, providing treatment with mixture of enzyme preparations of amylosubtilin in an amount of 0.5-0.6 wt% of raw material and glucavamorin in an amount of 1.6-2.0 wt% of raw material at temperature of 50-55 C for 5.0-5.5 hours; separating protein from liquid fraction by isoelectric sedimentation with following separation of solid protein sediment by centrifuging. Protein concentrates obtained from raw plant material may be used for further utilization in production of combined and artificial biologically full value products and texturates.
