SUBSTANCE: disclosed is a glaze containing isomalt powder, aquafaba and water. Initial components in the mixture are used in the following amounts: aquafaba from 22.0 to 27.0 wt.%, isomalt powder from 70.0 to 77.0 wt.% and water from 0.0 to 4.0 wt.%.
EFFECT: invention is aimed at improvement of organoleptic and rheological properties of the ready product and expansion of raw material base and range of products for dietary and antidiabetic purposes.
