SUBSTANCE: disclosed is a glaze with erythrite, containing isomalt powder, erythrite powder, aquafaba and water. Initial components in the mixture are contained in the following amount: aquafaba 22.0–27.0 wt.%, isomalt powder 35.0–38.5 wt.%, erythrite powder 35.0–38.5 wt.%, water 0.0–4.0 wt.%.
EFFECT: invention provides improved organoleptic and rheological properties of the ready product, wider raw material base and range of products for dietary and antidiabetic purposes and reduced caloric content of the ready product.
