FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to fish cutting. Proposed is a measuring head for determining the length of the abdominal cavity of a decapitated and eviscerated after slaughtering fish, which is moved with its head end forward in the direction of movement T, containing at least one measuring sensor and at least one sensor configured to be activated by the measurement sensor and connected to a control device which is configured to receive and process incoming measurement signals. Measuring head is arranged between two disc knives of a knife assembly intended for filleting a fish cut, and the measuring sensor is configured to collide with the costal bone of the fish located closest to the anus of the fish, during its movement, and at the same time the sensor connected to the control device is activated.
EFFECT: invention provides effective filleting of decapitated and eviscerated fish after slaughtering.
