FIELD: food industry.
SUBSTANCE: disclosed is a method of drying persimmons, which involves sorting raw materials, washing, cutting into slices or plates and drying. For drying, cut persimmons are placed in trays and placed in Ezidri Ultra FD1000 Digital electric drier, in which air comes out of motor compartment equipped with electronic equipment, is forced into volume limited by cover, middle and inner walls of trays. At the same time under action of created pressure air comes out through slots from inner wall of tray and, blowing cut persimmon laid out for drying, moves to central hole, taking with it evaporating moisture. Raw material is heated at temperature from 50 to 55 °C, and drying duration is 17-20 hours.
EFFECT: invention provides an increase in the content of the biocomplex in the obtained product.
