FIELD: food industry.
SUBSTANCE: invention relates to food industry. According to the proposed method eggplants are cut into h=l - 3 mm thick segments and placed on a flat needle carrier. One dries segments at atmospheric pressure with bilateral infrared radiation, density of the heat flow E=0.67-3.10 kW/m2 and length of the infrared rays wave corresponding to the maximal emissive ability of the infrared emitters λ=1.39-1.52 mcm. Eggplants are dried till moisture content in the finished product is 6 - 8%.
EFFECT: method allows to increase the finished product yield.
