FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to production of dairy-based sauces. Disclosed is a method for producing a sauce based on milk with guarana, which involves pasteurisation of cow milk with a fat content of 2.5% for 5-7 minutes at temperature of 100±2 °C, introduction of guarana in the form of a dry powder and mixing until thickening at temperature of 65-70 °C for 5-7 minutes, packing, sterilization at temperature 140-160 °C for 15-20 minutes and storage for 72 hours at temperature of 0-5 °C, at following content of initial components, wt.%: cow milk with fat content of 2.5% – 99.01-99.14; guarana 0.86-0.99.
EFFECT: invention allows to produce sauce with high quality indices and organoleptic properties, which can be recommended as prevention and improvement of lipid metabolism, reduction of weight and cholesterol level.
