FIELD: food industry.
SUBSTANCE: invention relates to food industry. Method for preparation of pumped confectionary mass from seeds of stone fruits and/or nut fruits, in particular nuts, almonds or nut-almond mixtures, includes crushing of seeds of stone fruits or nut fruits, already extracted in the form of stones or peeled from shell, by means of preliminary crushing. Then the mass formed as a result of preliminary grinding is supplied to horizontal mixer (8). Then, in horizontal mixer (8), the mass formed as a result of preliminary grinding is subjected to the action of hot air with a temperature higher than 60 °C and below 100 °C and/or vacuum until rupture of walls of its cells remained intact after preliminary grinding. Process of exposure to hot air and/or vacuum is carried out until the residual moisture content is below 2.1%. After that, the mass formed as a result of preliminary grinding, as well as exposure to hot air and/or vacuum, respectively, is subjected to single-stage or multi-stage further grinding to obtain a pumped confectionary mass. Also disclosed is an apparatus for implementing said method. Plant comprises preliminary grinder (2), horizontal mixer (8), device (13) for supplying hot air or vacuum and a fine grinding device (11).
EFFECT: invention is aimed at production of pumpable nut paste without addition of ingredients other than stone fruit seeds or nut paste, and without change of taste of confectionary mass based on nut paste.
