FIELD: food industry.
SUBSTANCE: invention relates to food industry. Method of preparing a pastry paste is proposed, in which sunflower seeds are calibrated, seeds with defects are removed, the weed impurity is then roasted at the temperature of at least 155 °C for at least 8 minutes, then it is cooled to the temperature of 30–35 °C for at least 5 minutes, followed by grinding to a uniform consistency – the sunflower paste, which is pumped into the mixer, with constant stirring, heat to the temperature of 60 °C and the following ingredients are added – high oleic sunflower oil, skimmed milk powder, powdered sugar with a particle size of up to 100 microns, cocoa powder, vanillin and mixed, then the mixed ingredients enter the conch machine, where they are conched for 5 hours at the temperature of 60–65 °C, and the mixture of mono- and triglycerides is added 60 minutes before the end of conching, however, the following ratio of the original ingredients is chosen, wt.%: sunflower weight 48.76–65.10; high oleic sunflower oil 9.30–17.55; skimmed milk powder 2.93–9.30; cocoa powder 1.86–6.83; mixture of mono- and triglycerides 0.46–2.44; powdered sugar 13.95–20.48; vanillin 0.03–1.01.
EFFECT: invention provides improved organoleptic properties, nutritional and biological value of confectionery paste while reducing the amount of carbohydrates.
