FIELD: alcoholic beverage industry.

SUBSTANCE: invention relates to alcoholic beverage industry. Water-and-alcohol mixture for infusion is obtained after precipitation of pectin with rectified alcohol of higher purification and its separation according to specified method. After separation of precipitated pectin water-alcohol mixture with content of ethyl alcohol 66° is formed. This water-and-alcohol mixture is diluted with specially prepared softened water to concentration of alcohol 40° and filtered on a coal column.

EFFECT: invention allows to produce high-quality product with utilization of beet-sugar production.
