FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to production of meat semi-products – chopped semi-products in casing. Disclosed is a method for the production of chopped semi-products in the shell, including the preparation and grinding of meat and fish raw materials in the form of fat pork and pollock fillet, preparation of mince from it with introduction of turnip preliminarily milled and steamed at temperature of 95-100 °C for 10-15 minutes, table salt, white sugar, ground white pepper, dry milled garlic, drinking water or flake ice, edible cattle blood, fish oil, sodium nitrite and ascorbic acid, its moulding into casings and subsequent cooling or freezing of semi-finished products at the following weight ratio of initial recipe ingredients, kg: fat pork – 15.0-20.0; pollock fillet – 55.0-60.0; parboiled turnip – 15.0-24.0; edible cattle blood – 5.0-10.0; fish oil – 0.1-0.5; culinary food salt – 1.5; ground white pepper – 0.1; white sugar – 0.5; dried milled garlic – 1.0; sodium nitrite – 0.003; ascorbic acid – 0.05; drinking water or flake ice 10.0-15.0.
EFFECT: invention enables to obtain a product with high organoleptic quality indices, high biological value, having functional properties; besides, it promotes expansion of the range of this type of semi-products.
