FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to production of minced meat semi-products from turkey meat, and may be used in production of specialized products from turkey meat. Disclosed is a method for the production of chopped semi-finished products, in which for preparation of mince turkey meat is milled in a cutter, then minced turkey meat is mixed in a cutter with hydrated Phytotal metabiotic, oat flakes and pumpkin protein, while adding melange, during chopping temperature of mince should not exceed 14 °C, therefore, ice water or flaked ice is added to it, iodized salt and ground pepper are added, semi-products are formed with the following content of initial components, wt.%: turkey meat 65; pumpkin protein 10; oat flakes 7; melange 6; Phytotal metabiotic 0.4; iodized salt 2; ground pepper 0.7; water – balance.
EFFECT: invention ensures expansion of the range of the turkey meat product with improved quality.
