FIELD: meat processing industry.
SUBSTANCE: invention relates to meat-processing industry, in particular, to production of chopped semi-product in shell, for example, bath. Semi-finished product in shell contains mince, ground pumpkin flesh and spices, additionally contains rosehips flour, preliminarily hydrated in weight ratio of rosehip:water, equal to 2:1, bulb onions and garlic. Minced meat consists of 85 pts. wt. greasy pork, preliminarily milled and marinated in 3 pts. wt. of 9 % table vinegar using 1 pts. wt. of salt. Quantitative ratio of initial components in the semi-finished product is selected.
EFFECT: higher food and biological value of the product while preserving the characteristic organoleptic properties of the ready product.
