FIELD: chemistry.
SUBSTANCE: present invention relates to a method for stabilizing anthocyanins in a polymer hydrogel, characterized by that 1-5 wt. % aqueous solution of red cabbage anthocyanin is added with 30 wt. % tetrakis(2-hydroxyethyl)orthosilicate and stirred for 1-5 minutes to form a hydrogel.
EFFECT: present invention provides stabilization of anthocyanin colour by their immobilization in non-toxic biocompatible silicate matrix during gel formation.
