FIELD: chemistry; manufacturing technology.
SUBSTANCE: invention relates to natural blue dyes from vegetable products which can be used in food and other industries. Natural blue dye composition contains: a) a natural juice fraction or an extract containing an acylated anthocyanin containing a diacyl anthocyan; b) a buffer solution with pH from 6.0 to 8.0; and c) a metal ion, preferably trivalent, or a salt thereof. Dye composition provides a stable blue dye, based on which, in combination with a natural yellow dye, a green coloring agent for food products is disclosed. Described also is a method of producing said blue dye composition.
EFFECT: invention provides natural blue dyes with high color stability and desirable characteristics thereof.
