FIELD: food industry.
SUBSTANCE: invention relates to food industry, to production of alcohol-free beverages and can be used in production of balsams based on vegetal raw materials to increase biological value of beverages. Proposed is a non-alcoholic balsam made from bee honey, a colourant, sugar syrup and water extracts from wild-growing vegetal and spicy-aromatic raw materials, juniper and cornelian cherry fruits, wherein in composition of wild-growing vegetal and spicy-aromatic raw materials vegetal components are used in the form of herb of Echinacea purpurea, European blueberry leaves, burnet-saxifrage root, black caraway leaves, cloves, ginger root, red clover inflorescences, heath speedwell herb, at following ratio of initial components per 1000 dal of finished product: sugar syrup – 1560 kg; water extract of wild-growing vegetal, spicy-aromatic raw materials – 3200 kg; bee honey – 250 kg; colourant – 150 kg; water extract of juniper fruits – 3200 kg; water extract of cornelian cherry fruits – 2000 kg, wherein water extract of wild-growing vegetal and spicy-aromatic raw materials contains initial vegetal components at the following ratio, wt. %: Echinacea purpurea herb – 28.6; European blueberry leaves – 14.3; burnet-saxifrage root – 8.6; black caraway leaves – 28.6; cloves – 5.7; ginger root – 5.7; red clover inflorescences – 2.8; heath speedwell herb – 5.7.
EFFECT: invention allows to expand the range of food balsams with pleasant spicy-honey tones, adaptogenic action, having high biological value.
