SUBSTANCE: invention relates to dairy industry. Disclosed is equipment (1) for the production of cheese with filling, characterized in that it comprises: bearing frame (2); support means (3) for cheese (C) fresh of pasta filata type, associated with said bearing frame (2); gripping means (6) for said cheese (C), associated with said bearing frame (2) and configured to hold part (P) of said cheese (C); filling means (7) for said cheese (C) associated with said bearing frame (2) and configured to introduce filling into said cheese (C) through said part (P) to produce cheese (S) with filling; common movable unit (20) and common movable unit (21), wherein said gripping means (6) comprises at least one gripping frame (8) connected to said bearing frame (2), and at least one diaphragm device (9) connected to said gripping frame (8), which closes along circumference of said cheese (C) for holding said portion (P) and opens to release said cheese (S) with a filling, and said diaphragm device (9) defines passage opening (10) through which said cheese (C) can pass, and comprises a plurality of gripping elements (11) located around through hole (10), wherein gripping elements (11) are close to the centre of the circle for intercepting cheese (C), wherein the equipment also includes an electronic control system (26).

EFFECT: invention ensures reduction of processing time, release from the use of qualified labour, minimization of the risk of bacterial contamination.
