FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular to processing of vegetables, and can be used in production of powdered inulin from topinambur. Process line includes a receiving hopper, a bubble-type washing machine, an inspection conveyor, a grinder, a drying unit and a packing machine. After receiving hopper in process sequence there is an inclined transfer conveyor, a lock bath for preliminary soaking of topinambur tubers from contamination. After the bubbling type washing machine there is a brush type washing machine for obtaining topinambur tubers as cleaned as possible from contamination. After the inspection conveyor there is a receiving hopper with a weighing device, and a hydraulic conveyor is installed in series behind the grinder to supply a mixture of water and ground topinambur to the extractors. Extractors and a complex for juice purification contain a screw centrifuge for coarse purification, a liquid separator for fine purification, a container for acid coagulation of protein, cartridge filters for purification from coagulated protein, capacity for adsorption purification with activated carbon, heat exchanger for juice cooling, bag filter for control filtration, ultrafiltration unit for ultrafine purification of juice, vacuum evaporation unit for production of concentrated inulin syrup. Process line is also equipped with drying complexes for producing dry pulp based on a drum dryer and inulin powder based on a spray dryer, as well as a cyclone for cleaning the spent drying agent.
EFFECT: invention usage will allow to increase the inulin quality and yield, exclude its losses in the process of topinambur tubers processing.
