FIELD: food industry.
SUBSTANCE: invention relates to food industry, namely to production of dairy semi-product of functional purpose. Disclosed is a method for the production of a semi-finished product of a cheese milk cutlet, which includes forming the cutlets, wherein a base mixture is prepared from cheese grains with size of 0.1-25 mm from milk, cutlets are moulded from the obtained mixture of round or oval shape, after which they are placed on a separator panel, which ensures retention of grains with size of 0.1-25 mm, and immersed in water with or without salt addition, heated to temperature of 70-100°C, moulds are held in it for 5 to 1200 seconds, after which they are removed and cooled. Cooling is carried out to temperature of 4±2°C or cooling is carried out at freezing to temperature of -18...-45°C.
EFFECT: invention provides simplification of the production process, expansion of the range of products production methods, expansion of the field of application of the products produced by the method – cutlets – due to the possibility of their consumption by a wide range of consumers, expansion of the range of produced products due to the possibility of production of cheese milk cutlets, which ensure the possibility of replenishing the required amount of protein in the consumer’s body without using meat ingredients.
