FIELD: food industry.

SUBSTANCE: chopper is used to crush rabbit meat, then the more fat chicken is added to it and crushing continues until a homogeneous mass is obtained. Dried brown laminaria seaweed is filled with drinking water in a ratio of 1:3 with a temperature of 4-6°C, and left to soak for 2 hours. The swollen laminaria is ground in a meat grinder with a hole diameter of 2-3 mm for 1 minute. Onions are skinned and thoroughly washed with running water, then ground in a meat grinder. Bread is pre-softened with milk. Salt is used in dry form. Chopped meat raw materials and all the prepared ingredients: onion, bread, laminaria, salt, spices, egg, water is added to the mixer in a predetermined amount and mixed with minced meat. Half-finished products of rounded-flattened shape are formed from the minced mass, which are breaded in breadcrumbs to obtain the desired product. Semi-finished products are sent to a quick-freezer.

EFFECT: shortened duration of the technological process, increased nutritional and biological value of the target product and provision of functional properties.
