FIELD: food industry.
SUBSTANCE: invention relates to meat industry, namely to dry-cured meat snacks, which are recommended for mental workers, pregnant women, after operations and chemotherapy, schoolchildren, military personnel, employees of the Ministry of Emergency Situations, tourists, sportsmen, as well as for preventive nutrition. Proposed are dry-cured meat snacks, which are made using poultry meat as raw material, that is breast, nitrite-curing mixture, salt, sugar, crushed black pepper, water, as well as an enriching ingredient - fried and milled hemp seeds of the “Maria” variety at the following ratio of initial components per 100 kg of unsalted raw materials: poultry meat (breast) of 100 kg; nitrite-salting mixture of 1 kg; salt of 0.9 kg; sugar of 0.8 kg; crushed black pepper of 0.1 kg; fried and milled hemp seeds of the “Maria” variety of 1 kg, or 3 kg, or 5 kg; water of 5 l.
EFFECT: invention ensures improvement of organoleptic indices of the product, allows to enrich with biologically significant components contained in hemp seeds, promotes expansion of the range of snack products.
