FIELD: food industry.
SUBSTANCE: apparatus for steam treatment of a food product, comprising: multistage conveyor parts made with possibility of continuous transportation of food product in forward and backward directions and located at a distance from each other in vertical direction; a steam part including a steam chamber forming a steam space through which the multistage conveyor parts pass, for steam treatment of food products transported by multistage conveyor parts, and conveyor covers configured to correspondingly close the multistage conveyor parts on top of the multistage conveyor parts passing through the steam space, so that to divide steam space into separate steam spaces, and parts of determining temperature, located next to each stage of multi-stage conveyor parts, for determining temperature, and air circulation parts connected to the steam chamber to be in communication with each of the separate steam spaces, for the air to flow into the separate steam spaces, and a processor electrically connected to the temperature detection parts, the air circulation portions and the multistage conveyor portions. Processor controls the speed with which the multistage conveyor parts transport the food product, based on the temperature determined by the temperature detection parts, and parts of air circulation to control flow rate of air flowing into separate steam spaces, based on temperature determined by the temperature detection parts. Food processing system, comprising: multistage conveyor parts configured to continuously transport food product in forward and backward directions and located at a distance from each other in vertical direction; a steam part including a steam chamber forming a steam space through which the multistage conveyor parts pass, for steam treatment of food products transported by multistage conveyor parts, and conveyor covers located on top of the multistage conveyor parts to divide the steam space into separate steam spaces; parts of determining temperature, located next to each stage of multistage conveyor parts, for determining temperature, and air circulation parts connected to steam chamber to be in communication with separate steam spaces, for air flow into separate steam spaces, and a processor electrically connected to the temperature detection parts, the air circulation parts and the multistage conveyor parts, and a freezing part configured to freeze a food product that is steamed in the steam part and transported by the multistage conveyor parts. Processor controls the speed with which the multistage conveyor parts transport the food product, based on the temperature determined by the temperature detection parts, and parts of air circulation to control flow rate of air flowing into separate steam spaces, based on temperature determined by the temperature detection parts.
EFFECT: invention makes it possible to process a large amount of a food product in a limited space.
