SUBSTANCE: invention is intended for usage in the field of fish processing. The filleting machine contains a transporter for tailfirst transportation of beheaded and drawn fish, saddles for fish arranged thereon, a blade for exposure of spinal radial bones to the spine, a blade for cutting abdominal radial bones in the tail area to the spine, a device for lateral bones cutting off, a device for fillet separation from the spine involving cutting-through the tectum left around the spine by blades for abdominal and spinal regions. The latter device contains an upper and a lower guides for bones and a separation unit having a separation tool for separation of fillet from the spine. A supporting bearing is connected to the unit. The separation unit is installed so that to be able to switch between the standby and the working positions. The supporting bearing is positioned on the separation unit.
EFFECT: improved efficiency of the processing process.
