FIELD: food industry.
SUBSTANCE: invention relates to ready-made flour products, namely to methods of making cakes. Cake production method includes a stage of dough kneading, a stage of cake sheets formation, a stage of cake sheets baking, a stage of butter-and-milk cream preparation, a stage of cake finishing. Cake sheets are baked at temperature of 180-250 °C for 30-300 s, boiling of syrup for preparation of butter-milk cream is carried out for 30-300 s, and whipping of cooled syrup with softened fat component during cream preparation is performed for 5-10 minutes.
EFFECT: invention usage will allow to improve organoleptic properties of the product and also to reduce its preparation time.
